INGREDIENTS: sweeteners: (erythritol, sucralose) (28,7%) – fibre (inulin) – whole milk powder – coconut oil powder – whey protein – lemon juice powder (1.8%) – emulsifiers: mono and diglycerides of fatty acids (vegetable origin) – thickeners: guar gum, carob bean seed flour, carrageenan – natural lemon flavor. PREPARATION

PREPARATION ICE CREAM – LEMON

INGREDIENTS: Easylight Lemon Ice Cream (166g), 550g water, 80g fresh cream or whipped cream (unsweetened and with 35/40% fat)
TOOLS: ice-cream maker (1.5 litres), scale, 2-litre pot, ice (for combined cooling), whisk, cooker or electric hotplate
PREPARATION TIME: 15 minutes
DIFFICULTY: easy
NUMBER OF SERVINGS: 14
SERVING: 50 g (final product)
PORTION-DIGESTIBLE CARBOHYDRATES: 1,04g (finished product)
CONSERVATION: store the final product in the freezer inside one or more containers for at max one month

PREPARATION*

Step 1: Insert the “freezer basket” (1.5 litres) inside the freezer (the day before the preparation of the ice cream) and set the power to a medium-high level** (not at maximum). Prepare a container with cold water and ice, then take a pot with a capacity of at least 2 litres in which to pour the quantity of water specified in the recipe; heat the water and remove the pot from the stove just before it boils, add the contents of the Easylight Ice Cream bag little by little while stirring quickly with the whisk. Put the pot back on the stove and wait for the first boiling while continuing to stir. Then cool the mixture by immersing the pan in the bowl with water and ice (still stirring). Add the cream and mix vigorously. Leave to rest in the refrigerator for 4 hours (ripening step).

Step 2: Remove the freezer basket from the freezer and assemble the ice cream maker by mounting the motor housing with the paddle following the manufacturer’s instructions. Activate the ice cream maker, stir the mixture well and pour it into the opening of the ice cream maker lid. Wait for the ice cream to form within 25-35 min, the initial volume will increase until the basket is filled. When the ice cream is ready, it can be served or stored in the freezer (leave it 10-15 min at room temperature before serving).

* The following instructions refer to the use of a 1.5 litre ice cream maker (these ice cream makers are composed of the freezer basket and the motor housing; having a “self-cooling” ice cream maker, the process is the same up to step 2, where it will be necessary to follow the manufacturer’s instructions; ice cream formation times vary according to the power of the ice cream maker).

**The optimal temperature is -18 °C, to reach said temperature read the user manual of your
fridge/freezer. If the power levels go from 0 to 5, we recommend level 4.
